Polyglyceryl-3 stearate CAS 27321-72-8
Polyglyceryl-3 stearate (triglyceryl stearate), is a non-ionic, PEG-free, plant-based polyol ester type emulsifier / surfactant. It is formed by the condensation of three molecules of glycerol and the esterification of one molecule of stearic acid (C18 saturated fatty acid), resulting in a monohydric ester with the formula C₂₇H₅₄O₈ and a molecular weight of 506.72.
Hydrophilic and lipophilic balance is moderate (HLB ≈ 5 - 7), suitable for both water and oil emulsification, dispersion and thickening.
High-temperature resistant, acid and alkali resistant, salt-resistant, with excellent thermal stability.
Easy to dissolve in oils and hot water. Can be dispersed in water at low temperatures.
Non-toxic, edible, biodegradable, and a food-grade compliant additive.
